Smoked Salmon, Ricotta, Flatbread

Ingredients (Serves 2)
8 oz, boneless [226.8 g] Smoked Salmon (Wild Caught)
2 tbsp, drained [17.2 g] Capers
0.25 onion (small) [37 g] Red Onions (Thinly sliced)
1 cup [20 g] Arugula (Rocket)
0.5 cup [123 g] Ricotta Cheese (Whole Milk)
1 Dash [1 g] Himalayan Pink Salt
0.5 tsp [1.05 g] Black Pepper
1 small lemon [30 g] Lemon Juice
2 medium flatbreads (5-1/4" dia) [90 g] Flatbread / Pita Bread (of your choosing)
Directions
Add ricotta cheese, salt, black pepper, and lemon juice to a bowl and mix until combined.
Refrigerate until ready to use.
Spread a layer of the ricotta cheese mixture on each flatbread.
Top flatbread with rocket (arugula), smoked salmon, red onions, and capers.
Refrigerate until ready to eat.
